Before
doing anything, for the love of all that is good in the world put on
some music. Preferably something with a brass instrument involved. Your
pancakes will come out better.
Ingredients:
- 1 cup water
- 1 cup milk
- 4 eggs
- 1/2 Tsp salt
- 1 Tsp vanilla
- 1 1/2 cup flour
- 4 Tb melted butter
At this point you'll want a topping. I like to lay a row of fruit and roll it up with the fruit inside. Soft fruits like strawberries, blueberries, raspberries can go in raw. Harder stone fruits (usually has a pit or seeds inside) apples, pears, peaches, nectarines can be cooked in a little butter and cinnamon/sugar until soft. Cooking a ripe, juicy, sweet summer peach in butter, cinnamon and sugar and stuffing them in a pancake is one of the greatest things in galaxy and should be experienced at least once. But get creative, I've had Nutella and banana slices, ham and swiss, bacon and scrambled eggs, peanut butter and jelly, maple syrup (if using syrup do a Canadian proud and get the real thing, most generic brands are corn syrup and maple flavor. Don't get that.) Anything you want that sounds good, give it a go.
I have a lot of fond memories of Mom making pancake after pancake after pancake after pancake and us seeing how many we could eat. Now I think of that whenever I make these, which is usually a lot. Happy Mothers Day!

Wow Patrick this is awesome!! Have you ever considered teaching cooking or writing a cook book! I love this! And you have expanded so well on different things to do with rolled up pancakes! I think I may have to try some of these ideas. They sound delicious. Your Swedish ancestors would be so proud of you! Thanks for carrying on this tradition. I am honored!
